Chicken of the Woods: The mushroom that tastes like chicken (and looks like it too!) 🍗🍄
Laetiporus sulphureus — bright orange shelves on trees, mild chicken-like texture when cooked young. Great vegan “chicken” substitute.
Crispy Chicken of the Woods Sandwich
Ingredients (makes 2 sandwiches)
For the mushroom “cutlets”
• 8–10 oz chicken of the woods, cut into bun-sized pieces
• 1 cup flour
• 1 tsp salt
• ½ tsp black pepper
• ½ tsp smoked paprika
• ½ tsp garlic powder
• 1 egg + 1 tbsp water (egg wash)
• Oil for frying (butter + oil combo works great)
For the sandwich
• 2 brioche or potato buns
• Lettuce leaves
• Sliced tomato or pickles (your choice)
• Mayo or special sauce (recipe below)
Optional special sauce
• 3 tbsp mayo
• 1 tbsp dijon or yellow mustard
• 1 tsp hot sauce
• 1 tsp honey or sugar
• Pinch of paprika
Instructions:
Blanch mushrooms if thick, then pat dry. Dip in egg, coat in seasoned flour. Pan-fry in oil 4–6 min per side until golden. Toast buttered buns in the same pan. Spread sauce on buns, add lettuce and tomato or pickles, place fried mushroom cutlet on top, and assemble the sandwich. Enjoy!
